A flat cast iron pan with 2cm sides, for anything you cook thin - crepes, pancakes, flatbreads, dosas, quesadillas. The low sides are the point: a spatula gets under the food at any angle, and flipping becomes easy rather than a gamble. Cast iron holds its heat, so the third pancake browns like the first.

It arrives pre-seasoned - dipped in oil and baked at the factory - so you can cook on it straight away. Like all bare cast iron, the surface improves the more you use it. The wooden handle stays cool on the hob.
